MANGO COCONUT AGAR-AGAR




INGREDIENTS

Mango Layer
2 cups unsweetened mango puree
7 tablespoons sugar
4 teaspoons agar agar

Coconut Layer
1 cup coconut milk
8 tablespoons sugar
3 tablespoons agar agar

1 cup water divided into two. 

DIRECTIONS

Combine 1/2 cup water with 4 tablespons agar agar. Stir to dissolve. Add sugar and cook for a couple minutes until sugar has dissolved. Turn off heat and add mango puree in small batches. Stir well. Pour it into a mold. 
Add 1/2 cup water with 3 tablespoons agar agar in saucepan. Stir well. Add sugar and cook until sugar has dissolved. Slowly add the coconut milk stirring constantly. Cook for 2 more minutes. Slowly pour over the mango mixture. Make sure the mango mixture is slightly firmed up before this step. Refrigerate for at least 6 hours or until firm. Cut into blocks and enjoy.
