Fresh fruit is paired with raspberry coulis for a sweet, light dessert.
Makes 5 servings
What You Need:
For the Raspberry Coulis:
2 cups fresh raspberries
1/3 cup superfine sugar
2 cups fresh raspberries

For the parfait:
4 small ripe peaches, peeled and thinly sliced
3/4 cup Raspberry Coulis (see recipe above)
2 cups blackberries
1/4 cup crème de cassis, crème de peche, or other fruit liqueur (optional)
1 tablespoon fresh lemon juice

What You Do:
- For the Raspberry Coulis, purée ingredients in a blender or food processor fitted with a metal blade until very smooth. If desired, pass mixture through a food mill or fine-meshed sieve to remove seeds.
- In four glass parfait dishes or large wine goblets, alternate layers of peaches, Raspberry Coulis, blackberries, and liqueur (if using). Chill for one hour before serving.
