Peach & Blackberry Parfait




Fresh fruit is paired with raspberry coulis for a sweet, light dessert.
Makes 5 servings
What You Need:
For the Raspberry Coulis:
2 cups fresh raspberries
1/3 cup superfine sugar
For the parfait:
4 small ripe peaches, peeled and thinly sliced
3/4 cup Raspberry Coulis (see recipe above)
2 cups blackberries
1/4 cup crème de cassis, crème de peche, or other fruit liqueur (optional)
1 tablespoon fresh lemon juice
What You Do:
  1. For the Raspberry Coulis, purée ingredients in a blender or food processor fitted with a metal blade until very smooth. If desired, pass mixture through a food mill or fine-meshed sieve to remove seeds. 
  2. In four glass parfait dishes or large wine goblets, alternate layers of peaches, Raspberry Coulis, blackberries, and liqueur (if using). Chill for one hour before serving.
